Vegan Buttermilk Recipe

Looking for a buttermilk substitute? This vegan alternative mimics the acidic tang and thickness of buttermilk and only takes a few minutes to whip up!

Simply mix one cup of plant based heavy cream with one tablespoon of white vinegar or lemon juice. That’s it! It’s now ready to be added to your recipe.

Should I let it curdle?

Most plant based milk alternatives do not curdle the same way as dairy milk. Depending on what type of milk is used, it may have a different reaction when the acid is added.

For example, some mixtures may curdle slightly, some may separate and look clumpy, or it might not change at all and look exactly the same.

Personally, I don’t let my buttermilk sit and “curdle” beforehand just because I don’t feel it’s necessary, but it won’t hurt your recipe if you choose to! If you don’t plan on using your buttermilk right away and separation occurs, a quick whisk will help blend the ingredients back together.

Lemon juice or vinegar: which is better?

It really boils down to your preference and what recipe you’re using. White vinegar is the most neutral and can be used in many recipes because it doesn’t significantly impact the overall flavor. Lemon juice has a different type of flavor that might be more noticeable in the final product, which may not work well with your recipe depending on what flavor profile you’re aiming for.

If you don’t have white vinegar or lemon juice, you could try apple cider vinegar or lime juice.

Notes

Best when used fresh, however it can be stored in the refrigerator for 2-3 days

If you don't have any heavy cream then you can use your favorite nut milk.
