Gluten Free Southern Baked Mac & Cheese

Mac and cheese is a southern classic that holds a special place in my heart. Nothing compares to that creamy, cheesy, melted goodness – especially when it’s homemade!

Traditional mac and cheese is made with a lot of known triggers for those with dietary restrictions. Gluten and dairy are the main culprits, but luckily there are tons of substitutions that can be used without sacrificing flavor. Now we don’t have to choose between sitting home alone for Thanksgiving or being tortured with delicious food we can’t eat. Hooray! 🎉

Gluten Free Pasta FTW

I used chickpea pasta but any gluten free pasta should work with this recipe.

Gluten free pasta cooks slightly different from regular pasta, so be sure to read the box instructions carefully if making for the first time.

I added extra flavor to the pasta water by mixing with chicken bouillon. You can also use chicken broth or kosher salt if you don’t have any bouillon on hand. Just make sure you don’t skip seasoning your pasta water – it makes a huge difference!

Pair this with gluten free cheddar bay biscuits!

No Dairy Mac?

Absolutely! There are so many different ways you can switch up this recipe to fit your dietary needs. Note: I haven’t tried these variations myself – this is just to help give you ideas on all the different ways to tailor this recipe:

  • Use shredded vegan cheese or nutritional yeast to make a cheese sauce if you don’t want to use block cheddar.
  • Swap out ghee for a plant-based butter or oil (it tastes way better with ghee though 😇).
  • Use vegan or lactose-free sour cream.
  • Use a neutral plant heavy cream, like one made from cashew milk.

A delicious and savory mac and cheese recipe with gluten and dairy-free options!

Ingredients

Dry

  • 1 box GF elbow pasta
  • Chicken bouillon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp salt

Wet

Instructions

  1. Preheat oven to 375°F.
  2. Bring water + chicken bouillon to a boil.
  3. Add pasta and cook according to box instructions.
  4. Strain pasta when done and add to a large bowl.
  5. Add ghee and stir until just combined (be careful not to overmix).
  6. Add sour cream + seasonings and stir until combined.
  7. Add 1 cup cheese. Stir until combined.
  8. In a separate bowl, whisk heavy cream and egg until combined to make a custard.
  9. In a greased cast iron, add a layer of pasta to the bottom of the skillet.
  10. Top pasta layer with 1 cup cheese. Pour some of the custard over the pasta layer.
  11. Repeat the previous step until all pasta, cheese and custard has been added to the skillet.
  12. Bake in oven for 35-40 min or until the cheese is browned and bubbly.
  13. Let rest for 5-10 min before serving.

Notes

Add lobster or crab for a luxurious twist!

This can also be made in an oven-safe glass baking dish if you don't have a cast iron skillet.
