Gluten Free Turkey Meatloaf

Whether you have celiac disease, gluten intolerance, or just simply taking a break from gluten, this mouthwatering dish will satisfy your meaty cravings without compromising on taste!

How to make this gluten free

The two main culprits in this recipe are the breadcrumbs and Worcestershire sauce.

You can buy gluten-free breadcrumbs or make them yourself by adding a slice of gluten-free bread to a chopper or blender and chopping until it’s crumbly. You could also use crushed rice crackers, finely chopped gluten-free oats (if you can tolerate those), or ground flax meal.

Many Worcestershire sauces are made with barley malt vinegar, which can be problematic for those with gluten sensitivities. Luckily not all are like that and there are some gluten-free options available.

Of course, you also can also leave out the sauce all together. While it does add a bit of depth to the flavor, it’s not necessary and the meatloaf will still taste great without it!

Other variations

One of the great things about meatloaf are the many ways you can switch it up and customize it to your preference:

  • This recipe uses ground turkey but you can use any meat like ground beef, pork, or lamb.
  • You can also make this vegan by swapping out the ground meat for lentils and using a vegan egg substitute.  
  • Meatloaf is usually served with a ketchup/BBQ glaze, but it can also be made with brown gravy. There’s no right or wrong!
  • Add vegetables like chopped peppers, corn, green beans, peas and carrots to make this a fully balanced meal.
Tips for a great meatloaf

Although meatloaf is relatively easy to make, there are some steps to consider to make sure it comes out perfect:

  • Mix all ingredients until just combined! Be sure not to overwork the meat mixture or your meatloaf may come out tough and dense.  
  • Meatloaf is considered fully cooked when it reaches an internal temperature of 160°F. Cook time will vary depending on oven settings.
  • Let it rest! It doesn’t seem like much, but letting your meatloaf rest for 5 – 10 minutes before slicing into it will help to retain its moisture and flavor.

  • Gheeluxe Clarified Butter
  • 1 lb ground turkey
  • 1/2 cup GF breadcrumbs
  • 1 cup onion & pepper mix, fresh or frozen
  • 1 egg
  • 1 tsp seasoning salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp thyme (optional)
  • 1/4 tsp sage (optional)
  • 2 tbsp ketchup
  • 1 tsp GF Worcestershire sauce


  • 1/2 cup BBQ sauce
  • 1/4 cup ketchup


  1. Preheat oven to 350°F.
  2. Grease a loaf pan with butter.
  3. In a large bowl, add ground turkey with breadcrumbs, pepper mix, egg, seasonings, ketchup and Worcestershire. Mix until just combined (take care not to overwork the filling).
  4. In a small bowl, combine ketchup and BBQ sauce for the topping. Mix well.
  5. Transfer filling to loaf pan and top with sauce.
  6. Bake for 1 hr or until internal temperature is 160°F and sauce is caramelized.
  7. Let rest for 5 - 10 minutes before serving.


Frozen vegetables will release more water during cooking. Use fresh vegetables to reduce water content if preferred.
