One Skillet Gluten Free Hamburger Helper

Who doesn’t love a warm bowl of cheesy hamburger mac? This tasty homemade hamburger helper is made in one skillet with pantry staples and none of the preservatives! Not to mention it’s gluten-free and has vegan options. Win-win!

How to customize it
  • Easily make this gluten-free by simply using gluten-free pasta. It’s usually made with elbow macaroni, but you can also use small shells, penne, or cavatappi.
  • Add more flavor with canned diced tomatoes seasoned with basil, garlic, and oregano or fire roasted tomatoes. 
  • Instead of milk, I used a plant based heavy cream mixed with beef stock for the sauce.  
  • If you don’t want to use any type of milk or cream, you can make a slurry as a thickener. A slurry is made by mixing 1 tbsp starch of choice for every 1 cup of liquid you use.
  • For the starch, you can use GF flour, tapioca starch, cornstarch, or arrowroot. Combine that with either water or broth and your slurry will be ready to use.
  • Keep in mind, the slurry may separate depending on how long it sits but this can be easily fixed by giving it a quick whisk before adding to the pot! 
  • You could also jazz it up with Italian seasoned meat or add taco seasoning for a chill mac variation.

Important: If you decide to make a slurry, be sure whichever liquid you use is either cold or room temperature before combining with the starch. It doesn’t mix very well with hot liquids and you could end up with clumps of starch in your dish!

Don’t Have Broth?

If you don’t have any broth or stock on hand then you can use plain water and adjust the seasonings as needed. If you have any bouillon then you can add that to the water to make a homemade broth! Be mindful of the salt content if using bouillon in this recipe. 

Best cheeses

Any variety of cheeses works well, but you can never go wrong with good old-fashioned cheddar! Personally I like to grate the cheese fresh off the block, not only because it tastes way better, but I also tolerate block cheese much better than pre-shredded. Either way, feel free to use whatever cheese(s) you already have on hand to save time. This recipe can also be made with shredded vegan cheese or a nutritional yeast cheese sauce.

Homemade hamburger helper made with pantry staples and no preservatives!

Ingredients

  • 1 lb ground turkey
  • 1/2 cup onion, diced
  • 1 tbsp Gheeluxe Clarified Butter
  • 2 cups plant based heavy cream
  • 1 cup low sodium beef stock
  • 1 box GF elbow macaroni, uncooked
  • 1 cup cheddar cheese, shredded

Seasonings

  • 1 tsp seasoning salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/2 tsp sugar

Instructions

  1. Preheat a large skillet over medium heat.
  2. Melt 1/2 tbsp ghee, add ground turkey and begin browning.
  3. Just before meat is done, add onions and half of the seasoning mix. Cook until onions are tender and meat is done.
  4. Drain fat (if any) and add remaining ingredients except for the cheese.
  5. Stir to combine and bring to a boil.
  6. Reduce heat, cover and cook until pasta is tender. Remove from heat when pasta is done (there will be some liquid left in the skillet).
  7. Stir in cheese and taste test. Adjust seasonings/cheese as needed.
  8. Allow to sit for 5 - 10 min to thicken the sauce.

Notes

Add taco seasoning for a chill mac variation.
