Easy One Pan Shrimp Fried Quinoa

Shrimp fried quinoa is a delicious twist to a classic dish! For those with celiac disease or non-celiac gluten intolerance, it can be challenging to find gluten-free options when it comes to Chinese cuisine. We’re filling the gap with this tasty and nutritious alternative that’s just as flavorful and satisfying!

Unlike traditional rice, quinoa has a unique texture and nutty flavor that can add a new dimension to your favorite dishes. If you miss having fried rice for dinner then give this recipe a try!

Can you really use quinoa?

Absolutely! In traditional recipes, fried rice is made by stir-frying precooked rice in a hot pan. Typically a wok is used, but we’ve made this recipe using sauté pans and it still tasted great!

As with fried rice, make sure that you are using precooked quinoa (at least 1 day old). The reason being is because the water needs time to set in the quinoa before frying. If you add freshly cooked quinoa to a hot pan, the water will release and add too much moisture to the pan, leaving you with mushy and soggy quinoa.

It’s important to season each layer to make sure that your entire dish has enough flavor. Of course, you can use any seasoning blend you like, or you can take a shortcut (like we did) and use a pre-made seasoning pack.

This dish also tastes great when topped with yum yum sauce or chill garlic sauce for a little kick!

If you miss having your favorite fried rice for dinner then try this delicious and flavourful alternative!

Cook Time 25 minutes
Total Time 45 minutes

Ingredients

  • 3 cups quinoa, cooked
  • 2-3 large eggs
  • 1/2 onion, diced
  • 1 1/2 cups frozen mixed vegetables

Seasonings

  • 2 packets fried rice seasoning
  • 2 tbsp Gheeluxe Clarified Butter, divided
  • 1 tsp GF low-sodium soy sauce
  • 1 tsp toasted sesame oil (optional)

Instructions

  1. Thaw shrimp and add enough fried rice seasoning to coat the shrimp evenly (about 1 tbsp). Set aside.
  2. Add eggs to a bowl with 1 - 1.5 tsp fried rice seasoning and scramble. Set aside.
  3. Preheat a wok or skillet over medium heat and melt 1 tbsp ghee.
  4. Add shrimp and cook for 2-3 minutes per side. Cooking times will vary so watch carefully to be sure not to overcook.
  5. Remove with a slotted spoon when done and place on a paper towel-lined plate. Set aside.
  6. Reheat pan on medium heat and melt remaining ghee. If using, add sesame oil as well.
  7. Add onion + mixed vegetables and enough fried rice seasoning to coat everything evenly (1 - 1.5 tbsp).
  8. Sauté vegetables for a few minutes until roasted and browned.
  9. Add quinoa to pan with remaining fried rice seasoning + soy sauce and mix well with vegetables.
  10. Spread mixture evenly in pan and cook for a few minutes until quinoa begins to toast.
  11. Create a circle in the middle of the pan by pushing quinoa to the sides. Add egg mixture and cook until scrambled.
  12. Add shrimp and mix everything together. Remove from heat and let sit for a few minutes before serving.

Notes

Serve with GF spring rolls.
