The star of the show

For this simple recipe, you only need three key ingredients:

  • Marshmallows
  • Butter (or ghee)
  • You guessed it – Rice Krispie cereal

The Kellogg’s brand is what’s traditionally used, however that’s not an option for those with gluten sensitives / celiac disease because most of their cereal sold in the U.S. use malt syrup, which is derived from barley and therefore contains gluten. But have no fear! There are many brands of rice cereal that are gluten-free and can be enjoyed worry-free.

Marshmallows + Ghee = Dairy-free Heaven 

Marshmallows only contain gelatin, sugar and water, which makes them a dairy-free treat in itself. When melted together with ghee, you have a lusciously velvet and deliciously fragrant sauce that pairs perfectly with the rice krispies cereal.

Gheeluxe Clarified Butter has a higher butter-fat content than other ghee brands and even some traditional butters, which makes it the BEST choice for this delectable treat.

Use marshmallows made without gelatin to make this recipe completely vegan!

This recipe uses chocolate rice krispies cereal, but you can also use regular flavor and leave as-is or tailor it with a personal twist!

You can drizzle with chocolate syrup, peanut butter, or salted caramel. Add mini chocolate chips, white chocolate chips, or top with colorful sprinkles. Include mix-ins like chopped nuts or dried fruits. The possibilities are only limited by your imagination!

  • 2.5 cups chocolate Rice Krispie cereal
  • 2 cups mini marshmallows, divided
  • 1/8 cup Gheeluxe Clarified Butter
  • 1/8 tsp salt, optional


  1. Melt ghee in a large pot
  2. Add 1.5 cups marshmallows and salt (if using).
  3. Stir in marshmallows until completely melted.
  4. Turn off stove and remove pot from heat.
  5. Add cereal + remaining marshmallows and stir until well combined.
  6. Line a 9x9 greased baking dish with parchment paper and add rice krispie mixture.
  7. Pat down lightly and let sit until cooled.


Add vanilla for extra flavor and sweetness!

This recipe can be doubled to make a larger batch.

For thicker rice krispie treats, simply double the batch and use a 9x9 baking dish.
