My goal is to inspire, educate and motivate home chefs of all skill levels, especially those of us with allergies / intolerances.

A Little About Moi

Like everyone else, I loved food, but my love affair was cut short by an ever-growing list of food allergies and debilitating symptoms. I decided a long time ago that no matter how hard it gets, I wasn’t going to let this keep me from enjoying life. I’m determined to find creative ways to still enjoy the foods I used to eat while also exploring new foods that I might not have tried otherwise.

When I first started having symptoms, I did everything I could to solve this problem with conventional medicine. I saw all of the doctors, specialists, and pretty much anyone my insurance would pay for. I took every single test they could throw at me and every prescribed drug they promised would fix it. I did all of this for years and years. Doctors could never figure out what was wrong, so eventually I was diagnosed with Irritable Bowel Syndrome (IBS) and sent on my way.

If you’re familiar with IBS then you know that it’s not an actual disease per se – just more of an acknowledgement that something is wrong with me but they don’t know what it is (and therefore can’t do anything about it). Fun stuff!

I knew that my diet played a role in my gut health and was already dairy free at this point, but I was still having terrible symptoms. I wanted to get to the bottom of it without taking another pill, so I went down the rabbit hole of food allergies and never turned back!

Grains vs Gluten  

Cutting out dairy from my diet helped somewhat but didn’t completely solve the problem.

Going gluten-free was even more frustrating because I was still having symptoms after cutting out everything that was a known allergy. So what gives? Well, it turns out that grains and gluten are not interchangeable like I thought. After seeing a holistic doctor, she explained the difference and recommended a strict grain-free diet. Le sigh.

Of course, I wasn’t thrilled with the idea at all. Grains made up like 90% of what I ate! Between bread, pasta, oatmeal, and rice, what else is there? I thought she may as well tell me to go on a water diet and live unhappily ever after. But my motivation to live a somewhat normal life outweighed any negative, hopeless feelings I had so I dove headfirst into unknown grain-free waters. And guess what? It was life-changing.

Granted, it was hard af and still is, but you can’t argue with results! On top of other symptoms drastically clearing up, my acne was the most telling when I had no active breakouts for the first time since grade school 😭 (yes I actually cried when that happened).

Cutting out grains was the only thing that gave me noticeable results. Now I can focus on healing my gut without worrying about triggering a reaction and starting all over.

Why Ghee?

Ghee was the very first step into my food journey that kind of happened on accident. I just wanted a way to cook with butter on high heat, that’s it! Don’t get me wrong, oils are great and I love all of them, but butter has a special place in my heart and I was tired of constantly mixing oil with butter for high heat cooking. An added bonus is that ghee is it’s packed with nutrients and dairy-free, so doesn’t trigger any reactions for me. Win-win!

I’ve been making ghee from scratch for years and over time have learned so much about the delicate ghee-making process and which butters make the best tasting, most luxurious ghee ever. Now that I make (almost) everything from scratch, it’s a delicious staple in my kitchen that gets used daily! And that’s where the inspiration for Gheeluxe came from.
